New Sussex Cheeses Available
We are delighted to have increased the range of cheeses we are stocking from High Weald Dairy & Alsop & Walker, both Artisan Cheese producers based in Sussex.

High Weald Dairy

Saint Giles – 850g
Pasteurised Cow Milk, Suitable for Vegetarians
Saint Giles is a delicious cow’s milk cheese made using the curd washed process, which removes all the whey during making. It has very buttery texture, similar to Port Salut, but with a more complex flavour.
Saint Giles melts extremely well and is named after the Church in Horsted Keynes, where the Dairy is based.

Sussex Marble – 850g
Pasteurised Cow Milk, Suitable for Vegetarians
Sussex Marble is a delicious cheese made from our Saint Giles cheese, with the addition of garlic and parsley. It has very buttery texture and melts extremely well, making it a great cheese to cook with.

Smoked Ashdown Forester – 850g

Oak Smoked Ashdown Forester’s is a young, firm un-pressed cheese with a creamy, slightly squidgy texture, which has been naturally smoked. It has an attractive shape and basket weave texture on the natural edible rind
Alsop & Walker

Mayfield – 1kg
Mayfield is a semi hard wax coated cheese made from full fat pasteurised cow’s milk. It has a creamy sweet nutty flavour, which varies in strength from mild to full dependent on age, and contains naturally developed oval shaped holes in its interior, called eyes.

Oak Smoked Mayfield – 1kg
Lightly cold smoked over oak, you can taste the original Mayfield cheese with a hint of smoke. This semi-hard cheese has a creamy, sweet and nutty taste. Aged for 5-7 months.
